Gratin Dauphinois is the French side dish of thin-sliced potatoes baked slowly in cream, milk, and garlic until the top turns golden and the layers melt into each other. Nutmeg adds a whisper of warmth that makes it unforgettable.

From the Dauphiné region of the Alps, it is the traditional companion to roast meats and holiday roasts alike. It must be baked gently — the potatoes should be silky, never soupy, and the crust deeply burnished.

  1. Preheat the oven to 350°F and rub a shallow baking dish with butter and a little of the garlic.
  2. Warm the cream and milk with the remaining garlic, nutmeg, salt, and pepper until steaming.
  3. Layer the potato slices in the dish, pour the cream mixture over, and press the potatoes down to submerge them.
  4. Scatter the Gruyère on top and dot with butter.
  5. Bake for 60 to 75 minutes, until the potatoes are completely tender and the top is deep golden. Rest 10 minutes before serving.
