Gravlax is Scandinavian cured salmon at its most elegant: a fresh fillet buried under a blanket of salt, sugar, white pepper and a thick layer of fresh dill, then weighted and chilled for a couple of days. The result is silky, rosy salmon with a clean, herbaceous cure.

Slice it paper-thin and serve on rye bread or crispbread with a sweet mustard-dill sauce, a classic of the smörgåsbord and midsummer table. A splash of aquavit in the cure is a traditional touch, though the dill does most of the work.

Step by stepInstructions

  1. Mix the salt, sugar and crushed peppercorns in a small bowl.
  2. Rub the mixture all over the salmon, pour over the aquavit if using, and press the dill onto both sides.
  3. Wrap tightly in plastic wrap, place in a shallow dish, and weight it with a board and cans.
  4. Refrigerate 48 hours, turning the fillet and redistributing the juices once a day.
  5. Scrape off the cure and dill, pat dry, and slice very thinly on the bias.
  6. Whisk the Dijon, sugar and vinegar, then slowly stream in the oil to make a mustard sauce; serve alongside.

💡 Chef tips & storage

Thin, even slices are easier with a very sharp, long knife. The gravlax keeps, wrapped, for about 5 days.
