The name gaeng keow wan means sweet green curry, and it is the mildest of Thailand’s curry family, yet lively enough to wake up your taste buds. Step by stepInstructions

  1. Spoon the thick cream from the top of one can of coconut milk into a wok with the oil and cook over medium heat until it sizzles and separates.
  2. Add the green curry paste and fry for 2 to 3 minutes, stirring, until it smells fragrant and the oil beads on the surface.
  3. Add the chicken and toss to coat in the paste, cooking for 3 minutes until the pieces are no longer pink.
  4. Pour in the remaining coconut milk and 1 cup of water, then add the eggplant, bamboo shoots, and kaffir lime leaves. Bring to a gentle simmer.
  5. Cook for 15 minutes, until the chicken is tender and the eggplant is soft.
  6. Season with fish sauce and palm sugar, then stir in the Thai basil and green chilies. Serve hot with jasmine rice.

💡 Chef tips & storage

If Thai eggplant are hard to find, swap in regular eggplant cut into chunks. Simmer the curry gently after adding the chicken so the coconut milk does not separate.
