Torta de jojoto is a rustic Venezuelan cake made from fresh corn, blended straight off the cob with butter, eggs, and sugar. It is a beloved home-style dessert that shows up at birthdays and weekend tables, often served warm with a scoop of ice cream.

The cake is dense, moist, and slightly coarse from the corn, with a sweet, buttery crumb and a delicately caramelized top. Fresh corn kernels give every bite a little pop of sweetness.

  1. Preheat the oven to 350°F and butter a 9-inch round cake pan.
  2. Blend the corn kernels with the milk until mostly smooth, leaving a little texture.
  3. Cream the butter and sugar, beat in the eggs one at a time, then stir in the corn purée and vanilla.
  4. Fold in the cornmeal, baking powder, and salt until just combined; pour into the prepared pan.
  5. Bake for 40 to 45 minutes until golden brown and a toothpick comes out mostly clean; cool 15 minutes before serving warm.
