Step by stepInstructions

  1. Heat the oil in a large pot over medium-high heat and brown the beef for 5 to 6 minutes, then add the chorizo and cook 2 minutes more.
  2. Add the onion and bell pepper and cook 4 minutes until soft, then add the garlic, tomatoes, paprika, and cumin and cook 3 minutes more.
  3. Stir in the rice and toast it for 2 minutes, stirring, until the grains turn translucent at the edges.
  4. Pour in the broth, season with salt and pepper, and bring to a boil.
  5. Reduce the heat to low, cover, and simmer for 20 to 25 minutes, until the rice is tender and the liquid is absorbed.
  6. Remove from the heat, rest 5 minutes, fluff with a fork, and serve hot.
