Ryguasu ka’e is a traditional country-style chicken stew from Paraguay’s Guaraní kitchens, where chicken, vegetables, and patience are all you need. It’s the kind of dish cooked in a single pot over a slow fire, eaten with mandioca or rice, and loved for its honest, deeply savory flavor.

Slow chicken, thick sauce, one pot

The chicken simmers until it’s falling-off-the-bone tender, and the onions and tomatoes break down into a rich, rust-colored sauce that coats every piece. It’s a comforting, unpretentious stew that tastes of good ingredients and time.

Step by stepInstructions

  1. Season the chicken pieces with salt and pepper on both sides.
  2. Heat the oil in a large heavy pot over medium-high heat and brown the chicken in batches, 4 to 5 minutes per side, until golden; set aside.
  3. In the same pot, cook the onion and bell pepper for 5 minutes until soft, then add the garlic, tomatoes, paprika, and cumin and cook 4 minutes more, scraping up the browned bits.
  4. Return the chicken to the pot, add the broth, and bring to a gentle simmer.
  5. Cover and cook over low heat for 40 to 45 minutes, until the chicken is very tender and the sauce has thickened.
  6. Taste, adjust the seasoning, and serve hot over rice or alongside boiled mandioca.

💡 Chef tips & storage

Browning the chicken well is what gives the sauce its deep color and flavor — don't skip it. It keeps 3 days refrigerated; reheat gently and add a splash of broth if the sauce tightens.
