Step by stepInstructions

  1. Heat the olive oil in a large pot over medium heat and brown the beef cubes for 5 to 6 minutes until colored on all sides.
  2. Add the chorizo slices and cook 3 minutes until they release their oil, then add the onion and garlic and cook 5 minutes until soft.
  3. Stir in the paprika and cook 1 minute until fragrant, then add the lentils, tomatoes, bay leaf, broth, salt, and pepper.
  4. Bring to a simmer, cover, and cook over low heat for 30 minutes, stirring occasionally.
  5. Add the carrots and potatoes and simmer 20 to 25 minutes more, until the lentils are tender and the stew is thick and saucy.
  6. Remove the bay leaf, taste for seasoning, and serve hot with crusty bread.
