Halo-halo — literally mix-mix — is the Philippines’ glorious answer to dessert, a rainbow of sweetened beans, jellies, and fruits buried under a mountain of shaved ice. Street vendors built it up by the glass on hot afternoons, and families have been assembling it at home ever since. There is no single recipe, only the golden rule: more toppings, more better, finished with a scoop of purple ube ice cream and a drizzle of evaporated milk.
A snow cone full of treasures
Dig your spoon all the way to the bottom and you hit the good stuff — chewy palm fruit, coconut strings, jackfruit, red beans, and custardy slices of leche flan. As the ice melts into the milk, everything sweetens and softens into a spoonful of pure nostalgia. Crunchy, creamy, fruity, and icy all at once, it is a dessert that is also a little project — and that is exactly why it is fun.

- Shaved ice: finely shaved — coarse ice melts too fast.

Variations
There is no wrong halo-halo: add pinipig (toasted young rice), cornflakes, flan, cheese, or your favorite tropical fruit. Skip the ice cream for a lighter version, or double it — no one will judge. It does not keep, so assemble it right before serving and enjoy it immediately.
