Mazamorra morada is made from maíz morado, the ancient purple corn of the Andes, simmered with pineapple, quince, and spices until it releases its incredible color. It is the traditional dessert of October, when Peruvians eat it alongside turrón for the Señor de los Milagros processions.

The pudding is glossy and thick, tasting of sweet corn, cinnamon, and clove with tender bits of dried fruit suspended in it. A squeeze of lime at the end cuts the sweetness and makes the purple bloom even brighter.
