Chicken long rice came to Hawaii with Chinese immigrants, who brought translucent mung bean noodles, called long rice, to the islands. Hawaiians adopted the dish for their own celebrations, and today a pot of chicken long rice simmers at nearly every luau, baby luau, and family gathering.

What makes it great is its clean, gentle flavor: tender chicken, silky noodles, and a delicate broth perfumed with ginger and green onion. Light yet satisfying, it comforts like a warm blanket in a bowl.

Step by stepInstructions

  1. Soak the long rice in warm water for 20 minutes, then drain and snip into shorter lengths.
  2. In a large pot, combine the chicken, broth, ginger, and onion. Bring to a boil, then simmer for 40 minutes until the chicken is tender.
  3. Remove the chicken and let it cool slightly, then shred the meat, discarding bones and skin.
  4. Skim the broth and strain out the ginger and onion. Return the broth to the pot, add the long rice, and simmer for 8 to 10 minutes until translucent and tender.
  5. Return the chicken to the pot with the soy sauce and salt. Warm through, then ladle into bowls and top with green onions.
