Vetkoek, or fat cake, is a golden pillow of fried dough that South Africans have been filling and topping for generations. The classic pairing is curried mince, a spiced beef filling that turns these simple breads into a complete, satisfying meal. From school tuck shops to Sunday lunch tables, vetkoek with mince is pure, unpretentious comfort.

Golden pillows hiding spiced beef

The outside is crisp and golden, the inside light and airy, ready to tear open and cradle a generous spoonful of fragrant curried mince. The filling is savory and gently spiced, with soft onion, tomato, and a warm curry finish that soaks into the bread. Serve them warm, open-faced with a little chutney, and watch them disappear.

Step by stepInstructions

  1. Mix the flour, yeast, sugar, and salt in a bowl, then add the warm water and knead into a soft, smooth dough.
  2. Cover and let the dough rise in a warm spot for 45 minutes, until doubled.
  3. Meanwhile, make the filling: heat 2 tbsp oil in a skillet and cook the onion until soft. Add the garlic and curry powder and stir 1 minute.
  4. Add the ground beef and cook, breaking it up, until browned. Stir in the tomato, salt, and stock, and simmer 10 minutes until thick. Set aside.
  5. Heat the frying oil in a deep pot to 350 F. Punch down the dough and divide it into 12 balls.
  6. Flatten each ball into a 3-inch round and fry in batches for 3 to 4 minutes per side, until deep golden and cooked through.
  7. Drain on paper towels, split each vetkoek open, and fill generously with the curried mince.

💡 Chef tips & storage

Let the dough rise until truly puffy for light vetkoek, and keep the oil at 350 F so they cook through without burning. The mince can be made a day ahead.
