Minced pork, ginger, and a soft egg turn it into a complete, gently spiced breakfast that regulars order from memory.

  1. Heat the oil in a large pot over medium heat and fry the garlic slices until golden and crisp, about 2 minutes. Remove with a slotted spoon and set aside.
  2. Add the rinsed rice and stock to the pot and bring to a boil, then reduce to a gentle simmer.
  3. Simmer, stirring now and then, for 30 minutes, until the rice has broken down and the porridge is thick and creamy. Add more stock or water if it gets too thick.
  4. Add the ground pork, breaking it up with a spoon, and simmer for 8 minutes until cooked through.
  5. Stir in the fish sauce and white pepper and taste for seasoning.
  6. Ladle into bowls. Crack an egg into each bowl and stir it through the hot porridge so it turns silky, then top with ginger, cilantro, green onions, crispy garlic, and fried shallots.
