Kalops

Kalops is Sweden’s homey beef stew, its gentle personality coming from whole allspice berries, bay leaves and plenty of onion. The meat simmers low and slow until it surrenders into tender, pull-apart chunks, and the broth turns mahogany and sweet.

It is a winter favorite, traditionally served with boiled potatoes and pickled beets, whose tang cuts through the richness. Kalops tastes of steady, unhurried cooking — the kind of pot that fills the kitchen with scent all afternoon.

Step by stepInstructions

  1. Melt the butter in a large heavy pot and brown the beef in batches over medium-high heat; set aside.
  2. Add the onions and carrots to the pot and cook until softened, 5-7 minutes.
  3. Return the beef with the broth, allspice and bay leaves; bring to a simmer, cover, and cook gently for 1 1/2 to 2 hours until the meat is very tender.
  4. Stir in the flour slurry and simmer 5 minutes to thicken.
  5. Season with salt and pepper and serve with boiled potatoes and pickled beets.

💡 Chef tips & storage

Whole allspice berries are key — they perfume the broth without overwhelming it. Skim the surface occasionally as it simmers.
