Käseschnitte, pain grillé au fromage alpin fondu et gratiné

Käseschnitte is Switzerland’s answer to the grilled cheese: thick bread topped with melting mountain cheese, broiled until blistered and golden. It is simple, fast, and enormously satisfying.

Often served for lunch or as a cozy supper with a fried egg or a slice of ham beneath the cheese, it pairs beautifully with a light salad. Use a strong, nutty cheese for the best melt.

Step by stepInstructions

  1. Preheat the broiler. Spread the bread with the butter and a thin layer of mustard.
  2. Top each slice with ham, if using, then cover generously with cheese.
  3. Broil 3–5 minutes until the cheese melts and blisters in spots.
  4. Dust with paprika and pepper, scatter with chives, and serve hot, topped with a fried egg if you like.

💡 Chef tips & storage

Watch the broiler closely—cheese goes from blistered to burnt in seconds. Use thick bread so the crust stays crisp under all that molten cheese.
