Khao soi is the crown jewel of northern Thai cooking, born in Chiang Mai where Burmese and Chinese influences meet. Egg noodles swim in a coconut-curry broth that is creamy, gently spicy, and deeply fragrant, and every bowl is topped with a tangle of crispy fried noodles. You can find it at morning markets and shophouse restaurants throughout the north, each bowl a little different.

The broth is rich and velvety, spiced with red curry and turmeric, with tender chicken falling apart in the bowl. The contrast of soft noodles, crisp fried noodles, and sharp pickled mustard greens is pure magic, and a squeeze of lime ties it all together. Home cooks can shortcut the crispy topping by frying a handful of the egg noodles until golden — a whole orchestra of textures in one bowl.

Step by stepInstructions

  1. Heat the oil in a small pot and fry half of the egg noodles in small batches until golden and crisp, about 1 minute each. Drain on paper towels and set aside.
  2. In a large pot, cook the shallots, garlic, and ginger in 2 tablespoons of the frying oil over medium heat until soft, about 4 minutes.
  3. Add the red curry paste and turmeric and fry for 2 minutes, until fragrant.
  4. Pour in the coconut milk and chicken stock, then add the chicken thighs. Simmer gently for 20 minutes, until the chicken is tender.
  5. Remove the chicken, shred it, and return it to the pot. Season with fish sauce and palm sugar.
  6. Soften the remaining egg noodles in hot water for 1 minute and divide among bowls.
  7. Ladle the hot broth and chicken over the noodles, top with the crispy noodles, cilantro, and a lime wedge.

💡 Chef tips & storage

Look for fresh egg noodles in the refrigerated section of an Asian market, and fry a handful of them for the crispy topping. Pickled mustard greens are worth seeking out, but sliced shallots and lime are a fine stand-in.
