Kivevé is pure nostalgia for Paraguayans: a thick, glowing-orange pudding of pumpkin (andái), cornmeal, milk, and sugar, perfumed with cinnamon and cloves. It’s served warm, often with a cube of fresh cheese melting into it, and it tastes like a grandmother’s kitchen.

Slow-cooked until thick and creamy, kivevé is sweet and lightly spiced, with the cornmeal giving it a soft, spoon-coating body and the pumpkin lending its gentle earthy sweetness. The contrast with a salty cube of cheese is the traditional — and brilliant — finishing touch.

Step by stepInstructions

  1. Put the pumpkin in a pot with 1 cup of water, cover, and simmer for 15 to 20 minutes until very soft.
  2. Mash the pumpkin smooth right in the pot, then stir in the milk, cornmeal, sugar, cinnamon, cloves, and salt.
  3. Cook over low heat, stirring frequently, for 15 to 20 minutes until thick and creamy, like a loose pudding.
  4. Remove the cloves, taste, and add a little more sugar if you like.
  5. Serve warm, each bowl topped with cubes of fresh cheese.

💡 Chef tips & storage

Stir often — cornmeal likes to stick to the bottom. Kivevé keeps 3 days refrigerated; reheat with a splash of milk to loosen it, and add the cheese only at serving time.
