Bacon and Egg Pie

Bacon and egg pie is New Zealand’s great portable feast, a farmhouse and school-fair staple since the early 1900s. Every family has their own version, but the soul of the dish is the same: a sturdy pastry shell holding a savory egg custard studded with bacon.

It’s best known as picnic food — served cold in thick slices it travels beautifully and tastes even better the next day. The combination of rich egg, salty bacon, and buttery pastry is pure Kiwi comfort, often finished with a dollop of tomato sauce.

Step by stepInstructions

  1. Preheat the oven to 375°F. Line a pie dish with one sheet of pastry.
  2. Cook the bacon and onion in a pan until the onion is soft and the bacon lightly browned; cool slightly.
  3. Spread the bacon mixture over the pastry base. Whisk the eggs with the milk, salt, and pepper and pour over the top.
  4. Top with the second pastry sheet, crimp the edges, cut a steam vent, and brush with beaten egg.
  5. Bake for 35–40 minutes until the pastry is golden and the filling is set.
  6. Cool for 10 minutes before slicing; it's also delicious cold.

💡 Chef tips & storage

For a pretty pie, lay a few halved eggs on top of the filling before adding the lid. Letting the pie rest before cutting stops the egg from running.
