Kiwi Burger with Beetroot

The Kiwi burger — a beef patty with a fried egg and, above all, a slice of canned beetroot — has been a milk-bar and takeaway icon since the 1970s. ‘With the lot’ means lettuce, tomato, cheese, egg, and beetroot, and visitors are always surprised by how good it is.

It’s the beetroot that makes it: sweet, earthy, and juicing into the beef and ketchup as you eat. The combination is messy, hearty, and gloriously unpretentious — the definitive Kiwi takeaway.

Step by stepInstructions

  1. Mix the beef, onion, breadcrumbs, egg, Worcestershire, salt, and pepper; shape into 4 patties.
  2. Grill or pan-fry the patties for 4–5 minutes per side, topping with the cheese in the last minute.
  3. Fry the eggs to your liking.
  4. Toast the buns and spread with tomato sauce.
  5. Stack: bun, lettuce, tomato, patty, egg, beetroot, bun. Serve immediately.

💡 Chef tips & storage

Don't overwork the mince or the patties go tough. Stack the beetroot right on top of the egg so it doesn't slide out.
