Breadfruit, or ulu, has fed Samoans for centuries, growing on massive trees that shade every village. The traditional way to cook it is to bury the whole fruit in the hot embers of a fire, turning it until the skin blackens and the flesh inside turns soft and creamy. In Samoa, ulu is as essential as rice or potatoes — roasted for lunch, boiled for dinner, and sliced into every family meal.

What makes it great: roasted breadfruit has a unique texture — fluffy and starchy like a baked potato, with a hint of sweetness and a faint smokiness from the charred skin. Dipped in salted coconut cream, it becomes something wonderful: earthy, rich, and deeply comforting, and a perfect partner to fish, pork, or palusami.

Step by stepInstructions

  1. Rinse the breadfruit and cut off the stem end.
  2. Roast the whole breadfruit over open coals, turning often, or bake it on a baking sheet at 400°F for 60-75 minutes until the skin is charred and a knife slides in easily.
  3. Let it cool just enough to handle, then peel off the blackened skin and remove the core.
  4. Slice the flesh into wedges and serve warm with the coconut cream whisked with the salt, or with a little butter.
  5. Alternatively, peel and cube the breadfruit, boil in salted water for 20-25 minutes, and serve the same way.

💡 Chef tips & storage

Breadfruit is ripe when the skin yields slightly to pressure and smells faintly sweet. Leftover roasted ulu is delicious fried the next morning with eggs.
