The best sausage rolls have a generous, well-seasoned filling and pastry that shatters as you bite. Serve them warm with tomato sauce for dunking — they’re simple, satisfying, and gone embarrassingly fast.

  1. Preheat the oven to 400°F.
  2. Combine the sausage meat, onion, breadcrumbs, beaten egg, and Worcestershire sauce in a bowl.
  3. Cut each pastry sheet in half lengthways. Divide the filling and shape into long logs along each strip.
  4. Brush the pastry edges with water, roll up, and seal. Cut each log into 4 rolls.
  5. Place seam-side down on a baking tray, glaze with beaten egg, and bake for 25 minutes until puffed and golden.

Grating the onion keeps the filling moist without big chunks. Uncooked rolls freeze well and can be baked straight from frozen for last-minute party food.
