Langos

Langos is Hungary’s iconic fried bread — a golden, puffy disc of yeasted dough, crisp on the outside and impossibly soft within. Straight from the hot oil, it’s rubbed with raw garlic and topped with a swoosh of sour cream and a drift of grated cheese.

Street stalls across Hungary fry langos to order at festivals, beaches, and markets, and the variations are endless: cheese, sausage, dill, even Nutella. But the classic garlic-sour-cream-cheese version remains unbeatable.

Step by stepInstructions

  1. Dissolve the yeast and sugar in the warm water and let it foam for 10 minutes.
  2. Mix the flour, salt, and mashed potato, then add the yeast mixture. Knead into a soft, slightly sticky dough. Cover and let rise until doubled, about 1 hour.
  3. Turn the dough onto a floured surface and divide into 8 pieces. Stretch each into a flat, freeform disc about 1/4 inch thick.
  4. Heat the oil to 350°F. Fry the discs one at a time for 2-3 minutes per side until puffed and golden brown.
  5. Drain briefly, then rub the hot surface with cut garlic.
  6. Top with sour cream and grated cheese while the langos is still hot. Sprinkle with dill if you like, and serve immediately.

💡 Chef tips & storage

Rub the garlic on while the bread is still sizzling hot — the heat releases the flavor. Langos must be eaten warm, straight away.
