Locro

Locro has been warming the Andes since before the Spanish arrived, and today it is the dish Argentines eat on May 25th, Independence Day. It is a slow, soulful stew that turns humble ingredients — hominy, squash, and meat — into something majestic.

A patriotic pot of slow-cooked gold

The hominy and beans melt into a creamy, almost porridge-like base while the meats collapse into shreds and the squash dissolves into sweetness. A spoonful of quiquirimichi, the spicy onion relish, wakes the whole thing up.

Step by stepInstructions

  1. Drain and rinse the soaked hominy and beans and place them in a large pot with the water; bring to a boil, then reduce to a gentle simmer.
  2. Add the beef, pork, chorizo, bacon, onion, and scallions and simmer uncovered for 1 1/2 hours, stirring occasionally.
  3. Stir in the squash, paprika, cumin, and salt and continue simmering for another 1 to 1 1/2 hours, until the hominy is very tender and the stew is thick and creamy.
  4. When the stew is nearly done, make the quiquirimichi: fry 1 chopped onion in 3 tablespoons of oil with 2 teaspoons of paprika and 1 teaspoon of chili flakes until soft, then set aside.
  5. Season the locro with salt to taste and ladle into deep bowls with a spoonful of quiquirimichi on top.
  6. Let the pot sit for 10 minutes off the heat before serving — it thickens further and tastes even better.

💡 Chef tips & storage

Soak the hominy and beans overnight or the simmering time stretches past 5 hours. Locro thickens as it sits; thin it with hot water or stock when reheating. Leftovers keep 4 days refrigerated or 3 months frozen.
