Lomo saltado was born in Lima’s Chinese immigrant kitchens in the 1800s, where Cantonese stir-fry technique met Peruvian ingredients head-on. It is the most beloved dish of chifa cuisine and a perfect weeknight hero: fast, saucy, and ridiculously satisfying.
