Malabi

Malabi is the cool, silky milk pudding sold from street carts and cafés across Israel, especially on hot summer evenings. It traces its roots to the Ottoman Middle East, where milk puddings were scented with rose water and served with fruit syrups. Today it is a nostalgic treat, served in little cups with crimson syrup and crushed pistachios on top, and a fixture at wedding dessert tables and holiday buffets across the country.

The pudding is set with cornstarch into a soft, jiggly custard that slides off the spoon and melts on the tongue. Rose water gives it a delicate floral perfume, while the sweet, berry-red syrup adds a bright, fruity contrast. The pistachios on top bring a welcome crunch and a hint of saltiness that ties the whole cup together. Chilled until very cold and served in glasses, it is the most elegant way to end a summer meal.

Step by stepInstructions

  1. Whisk the milk, sugar, cornstarch, and salt in a saucepan until the cornstarch dissolves.
  2. Cook over medium heat, whisking constantly, until the mixture thickens and just begins to bubble, 8 to 10 minutes. Remove from the heat.
  3. Stir in the rose water and whisk until smooth.
  4. Pour into 4 serving glasses or small bowls. Refrigerate until fully set and cold, at least 4 hours.
  5. For the syrup, simmer the water and sugar 5 minutes, then stir in the strawberry syrup. Chill.
  6. Spoon the syrup over the chilled puddings.
  7. Top with pistachios and berries and serve cold.

💡 Chef tips & storage

Whisk without stopping or the cornstarch will lump. Malabi is best the day it is made, straight from the fridge.
