  1. In a bowl, combine the crumbled paneer, mashed potatoes, cornstarch, and salt. Knead gently into a soft dough and shape into 12 smooth round koftas. Chill for 15 minutes.
  2. Meanwhile, make the gravy: simmer the cashews in 1 cup of water for 10 minutes, then drain and blend with the tomatoes into a smooth puree.
  3. Heat 2 tablespoons of ghee in a skillet and cook the onion until golden, about 7 minutes. Add the ginger-garlic paste and green chilies and cook for 1 minute.
  4. Pour in the tomato-cashew puree, turmeric, garam masala, and sugar. Simmer for 8 minutes, until the gravy thickens, then stir in the cream and season with salt.
  5. Heat the remaining ghee in a wide pan over medium heat and fry the koftas until golden brown on all sides, about 5 minutes. Drain on paper towels.
  6. Just before serving, warm the gravy and slide the koftas in gently. Let them sit for 2 to 3 minutes, then serve hot with naan or rice.

💡 Chef tips & storage

Do not overknead the kofta mixture or the dumplings turn tough. Drop the koftas into the hot gravy just before serving and let them soak only a few minutes, or they soften and fall apart.
