Malfouf mahshi is stuffed cabbage, the patient cousin of stuffed grape leaves, made by rolling cabbage leaves around herbed rice and beef and simmering them in a lemony garlic broth.   1. Core the cabbage and put it in a large pot of boiling salted water. Cook for 5 minutes, then peel off the softened outer leaves. Repeat until you have about 20 large leaves; keep the water hot.
  2. Trim the thick stem from each leaf and cut the largest leaves in half.
  3. Mix the rice, meat, onion, dill, parsley, allspice, salt, and pepper in a bowl.
  4. Place about 2 tablespoons of filling on each leaf, fold in the sides, and roll tightly.
  5. Line the pot with torn leaves and pack the rolls in snug layers, tucking the garlic cloves between them.
  6. Stir the lemon juice, olive oil, and broth together and pour over the rolls. Set a heatproof plate on top, cover, and simmer over low heat for 50 to 60 minutes, until the rice is tender.
  7. Rest for 10 minutes, then serve warm with lemon wedges and yogurt.

💡 Chef tips & storage

Simmer the rolls with a plate on top so they stay submerged and cook evenly. Leftover malfouf is even better the next day, when the flavors settle into the broth.
