Mantı

Mantı is Turkey’s most loved dumpling, and the city of Kayseri claims the crown. Tiny squares of dough are filled with seasoned ground beef, pinched into little parcels, and boiled until tender, then dressed with garlic yogurt and sizzling butter tinted with paprika. Legend has it that a good daughter-in-law should be able to fit forty mantı on a single spoon. The dough is simple, but the folding is a labor of love shared by generations at family tables and at every celebration worth attending.

Each dumpling is small enough to eat in one bite, with a sturdy noodle texture that gives way to savory, oniony beef. The cool garlic yogurt and hot spiced butter make a perfect contrast, and a dusting of dried mint and sumac finishes the plate. Step by stepInstructions

  1. Make the dough: combine the flour, egg, water, and 1/2 teaspoon salt and knead into a firm dough, about 8 minutes. Cover and rest 30 minutes.
  2. Mix the ground beef, grated onion, 1/2 teaspoon salt, and black pepper into a filling.
  3. Roll the dough out as thin as possible on a floured surface. Cut it into 1-inch squares.
  4. Place a small pinch of filling in the center of each square and pinch the corners together to form little bundles. Keep them covered as you work.
  5. Bring a large pot of salted water to a boil and cook the mantı until they float and are tender, 10 to 12 minutes. Drain.
  6. Mix the yogurt with the garlic and a pinch of salt. Melt the butter in a small pan with the paprika until sizzling, about 1 minute.
  7. Divide the mantı among bowls, spoon the garlic yogurt over the top, then drizzle with the spiced butter and sprinkle with dried mint. Serve hot.
