Mast-o Khiar

Mast-o khiar is the Persian answer to tzatziki: a cool, creamy yogurt bowl flecked with cucumber, garlic, and mint, dressed up with walnuts and raisins. It is served at nearly every Persian meal, soothing spicy stews and rich kebabs alike. In summer, Iranians make it a little looser and drink it like a cold soup. Every household makes it slightly differently — some with dill, some with a crunch of walnuts — but the base is always thick yogurt and plenty of cucumber.

Cool, tangy, and full of crunch

The yogurt is thick and tangy, the cucumber adds crunch and freshness, and the walnuts bring a pleasant bitterness that the raisins balance with sweetness. A bloom of dried mint in oil poured on top makes the whole bowl fragrant. Serve it as a side, a dip, or a light lunch with warm bread. It is also a wonderful partner for grilled meat, and a little grated garlic and lemon zest brighten it further.

  1. Grate the cucumber and squeeze out the excess liquid with your hands.
  2. In a bowl, combine the yogurt, cucumber, garlic, walnuts, raisins, and salt. Stir until smooth.
  3. Heat the oil in a tiny pan and bloom the dried mint in it for 30 seconds until fragrant.
  4. Spoon the yogurt mixture into a serving bowl and swirl the mint oil over the top.
  5. Chill for at least 30 minutes before serving, garnished with rose petals if you like.

Squeeze the grated cucumber well so the yogurt stays thick. Let the bowl rest in the fridge for an hour before serving — the flavors need time to come together.
