Steaming transforms the dense bananas into something tender and mild, with a gentle sweetness that soaks up the savory beef sauce beautifully. The sauce is deeply satisfying: onions cooked slow, tomatoes melted in, beef falling apart, with just enough broth to pool around the bananas. A spoonful of both together is pure comfort, soft, saucy, and quietly luxurious. Matoke is often eaten with the hands, and in the traditional style the banana leaves double as serving cloths.

Step by stepInstructions

  1. Rub a little oil on your hands, then peel the bananas and cut each one in half lengthwise.
  2. Place the bananas in a pot with the water, cover, and steam over medium heat until very tender, about 20 minutes. Keep warm.
  3. Meanwhile, heat the remaining oil in a skillet and brown the beef on all sides, about 6 minutes.
  4. Add the onion and cook until soft, about 5 minutes, then add the garlic, ginger, turmeric, and salt.
  5. Stir in the tomatoes and cook until they break down, about 5 minutes.
  6. Pour in the beef broth, cover, and simmer until the beef is tender, about 30 minutes.
  7. Mash the steamed bananas lightly with a fork, leaving some texture.
  8. Serve the bananas in a shallow bowl, topped generously with the beef sauce.

💡 Chef tips & storage

Green bananas are sticky when peeled; oil your hands and the knife to keep them from clinging. Serve with extra sauce on the side, the bananas drink it up.
