Mbaipy is one of the oldest sweets in Paraguay, a Guaraní creation from long before sugar arrived: cornmeal cooked with water (and today milk) into a thick, soothing pudding, served with a generous pour of molasses or honey. It’s humble, warming, and deeply traditional — a taste of the land itself.

Cornmeal, molasses, and a thousand years of tradition

Slow-cooked until thick and glossy, mbaipy is mildly sweet and gently corny, and the dark molasses gives it a deep, almost coffee-like richness. The traditional salty cheese on top makes the contrast sing — sweet, salty, smooth, and warm all at once.

Step by stepInstructions

  1. Bring the water and milk to a gentle simmer in a heavy pot with the salt and anise.
  2. Whisk in the cornmeal slowly, then the sugar, and reduce the heat to low.
  3. Cook for 30 to 35 minutes, stirring frequently, until the mixture is thick and pulls away from the spoon like soft polenta.
  4. Taste and add more sugar if you like.
  5. Serve warm in bowls, each portion topped with a drizzle of molasses and a slice of fresh cheese.
