Pastel de papa is the ultimate family dinner: a layer of savory beef stewed with onion, paprika, and cumin, crowned with creamy mashed potatoes and baked until the top is bronzed. It is hearty, humble, and loved by everyone.

Step by stepInstructions

  1. Boil the potatoes in salted water until tender, about 20 minutes, then mash with the warm milk, half the butter, and a pinch of salt; set aside.
  2. Meanwhile, heat the oil in a skillet and cook the onions for 5 minutes, add the garlic for 1 minute, then add the ground beef, paprika, cumin, salt, and pepper.
  3. Cook the beef, breaking it up, for 10 minutes until browned and dry, then stir in the peas and remove from the heat.
  4. Spread the beef in a baking dish, top with the egg slices and olives, and cover with an even layer of mashed potato.
  5. Swirl the top with a fork and dot with the remaining butter.
  6. Bake at 375°F for 30 to 35 minutes, until the filling is bubbling at the edges and the top is golden brown.
  7. Rest for 10 minutes before serving so it slices cleanly.
