Medu vada is the crispy counterpart to soft idli, a ring of ground urad dal fried until it turns deep gold. Vendors fry these lentil donuts fresh each morning across Tamil Nadu and Karnataka, and no festive breakfast is complete without a basket of them. They are the first thing to disappear from the plate, every single time, whether served at a temple, a wedding, or a quiet family table.

  1. 1. Soak the urad dal in water for 4 to 6 hours, then drain well.
  2. 2. Grind the dal with just a few tablespoons of water into a thick, smooth paste. Transfer to a bowl and whisk vigorously for 2 to 3 minutes until fluffy and pale.
  3. 3. Stir in the salt, pepper, ginger, chilies, onion, curry leaves, and cilantro.
  4. 4. Heat oil in a deep pan to 350°F. Wet your palms, take a golf-ball-sized portion of batter, and shape it into a round with a hole in the center.
  5. 5. Slide the vada into the hot oil and fry 3 to 4 minutes per side until deep golden and crisp.
  6. 6. Drain on paper towels and serve hot with coconut chutney and sambar.
