Migas - scrambled eggs with crispy tortilla chips, peppers, onions and cheese

Migas is the Tex-Mex breakfast of scrambled eggs, crispy tortilla chips, and chiles — a pan of eggs cooked with corn tortilla strips until they’re soft, chewy, and studded with crunchy bits. Served with tortillas or in a breakfast taco, it’s the perfect morning scramble.

Chef Emily presents Migas

The crunchy-scrambled breakfast

Scrambled eggs cooked with crispy tortilla chips, chiles, and cheese — migas, the Tex-Mex breakfast.

Step by stepInstructions

  1. Whisk the eggs with the milk, salt, and pepper.
  2. Melt the butter in a skillet and cook the onion and jalapeño until soft, 3 minutes.
  3. Pour in the eggs and scramble until almost set, about 3 minutes.
  4. Fold in the tortilla chips and cheese and cook 1 minute more.
  5. Top with tomato and cilantro and serve with warm tortillas.

💡 Chef tips & storage

Add the tortilla chips at the very end so some stay crunchy. Serve with warm tortillas, salsa, and beans.
