Sheet pan breakfasts became popular in American home cooking in the 2010s as busy families looked for easy, one-pan ways to feed a crowd with minimal cleanup. Roasting potatoes, sausage, and eggs together on a single sheet pan turned a multi-skillet breakfast into an easy oven-based meal.

One pan, minimal cleanup, big breakfast flavor

Diced potatoes, sausage, and peppers roast together on a single sheet pan, finished with baked eggs for an easy all-in-one breakfast.

Step by stepInstructions

  1. Preheat the oven to 200°C.
  2. Toss the potatoes, sausage, bell pepper, and onion with olive oil, paprika, salt, and pepper on a sheet pan.
  3. Roast 25 minutes, stirring halfway through.
  4. Make 6 small wells in the mixture and crack an egg into each.
  5. Return to the oven and bake 8-10 minutes until the eggs are set to your liking.
  6. Sprinkle with cheese and serve immediately.

💡 Chef tips & storage

Cut the potatoes into small, even pieces so they roast through in the same time as the sausage. Keep an eye on the eggs near the end, since they finish cooking quickly.
