Minestrone - rustic Italian vegetable soup with beans and pasta

Minestrone is a thick, vegetable-packed soup that changes with the seasons and whatever the garden offers. Beans, tomatoes, pasta, and a swirl of pesto make it substantial enough to be a meal in a bowl.

This Italian classic is endlessly forgiving — swap in your favorite vegetables and adjust the broth to your liking. Serve with grated Parmesan and crusty bread for a nourishing bowl of comfort.

Step by stepInstructions

  1. Heat the oil in a large pot over medium heat; cook the onion, carrots, and celery until soft, about 8 minutes.
  2. Add the garlic and cook 1 minute, then stir in the zucchini and green beans.
  3. Add the tomatoes, broth, and basil; bring to a boil, then simmer 20 minutes.
  4. Stir in the cannellini beans and pasta and cook until the pasta is tender, about 10 minutes.
  5. Season with salt and pepper, and add a splash of water if the soup is too thick.
  6. Ladle into bowls and finish with a drizzle of olive oil and plenty of Parmesan.

💡 Chef tips & storage

Minestrone loves leftovers — it thickens and deepens overnight. Stir the pasta in near the end so it doesn't turn mushy when you reheat.
