Step by stepInstructions

  1. Make the dough: mix the flour and salt, then stir in the egg, warm water, and oil; knead 5 minutes. Cover and rest 30 minutes.
  2. Mix the mashed potatoes, cheddar, sour cream, salt, and pepper until smooth.
  3. Roll the dough thin and cut 3-inch rounds. Spoon filling onto each, fold, and pinch the edges.
  4. Boil the pierogi in salted water 3-4 minutes until they float; drain.
  5. Melt the butter in a skillet and cook the onion until golden, then fry the pierogi until crisp on both sides. Serve with sour cream and chives.
