Golden baked Runza bread pocket stuffed with beef and cabbage

A Nebraska hand pie of yeast dough stuffed with seasoned ground beef, cabbage, and onion, baked until golden.

Nebraska’s official sandwich

Runza is both a restaurant chain and a state institution — a puffy, golden yeast pocket stuffed with savory beef and cabbage.

Step by stepInstructions

  1. Dissolve the yeast and sugar in the warm milk; let stand 5 minutes. Mix in the butter, egg, salt, and flour; knead until smooth. Cover and rise 1 hour.
  2. Brown the beef with the onion; add the cabbage, salt, pepper, and garlic powder and cook until wilted. Stir in the butter and cool.
  3. Preheat the oven to 375°F. Divide the dough into 8 pieces and roll each into a 7-inch oval.
  4. Spoon the filling onto each, fold over, and pinch the edges tightly.
  5. Place seam-side down, brush with the egg wash, and bake 20-22 minutes until deep golden. Serve warm.

💡 Chef tips & storage

Cool the filling before assembling so it doesn't tear the dough or steam it. These freeze beautifully — reheat from frozen at 350°F for 15 minutes.
