Pacific Coconut Rice

Coconut rice is the quiet hero of Pacific tables, served alongside grilled fish, curries and lovo feasts from Hawaii to Fiji to Papua New Guinea. It is simply rice cooked with coconut milk instead of water, yet the transformation is magic: every grain turns tender, sweet and faintly nutty.

It is the perfect canvas for bold island dishes, soaking up coconut sauces and balancing spicy curries. Add a pandan leaf or a pinch of turmeric for an extra layer of island flavour.

Step by stepInstructions

  1. Rinse the rice in cold water until the water runs clear; drain well.
  2. Combine the rice, coconut milk, water, salt and pandan leaf (if using) in a pot.
  3. Bring to a boil, then reduce the heat to low, cover and simmer for 15-18 minutes, until the liquid is absorbed.
  4. Remove from the heat and let sit, covered, for 10 minutes. Fluff with a fork and serve.

💡 Chef tips & storage

Don't stir the rice while it cooks — stirring releases starch and turns it gummy. Leftover coconut rice makes wonderful fried rice the next day.
