Step by stepInstructions

  1. Cook the bacon in a Dutch oven until crisp; remove, leaving the fat.
  2. Cook the onion and celery in the fat until soft; add the butter and flour and cook 2 minutes.
  3. Whisk in the clam juice, add the potatoes, and simmer until tender, about 12 minutes.
  4. Stir in the clams, milk, cream, salt, pepper, and thyme; heat gently without boiling for 5 minutes.
  5. Serve hot, topped with bacon and oyster crackers.

Add the clams last and heat gently — they turn rubbery if boiled. It's even better the next day.
