Pineapple-Glazed Chicken

Pineapple grows throughout the Pacific, and its sweet-tart juice has glazed grilled chicken on island barbecue grills for generations. The glaze — pineapple, soy, garlic and a little brown sugar — caramelises into a sticky, glossy coat that is equal parts sweet, salty and smoky.

It is the kind of dish made for sharing: juicy chicken thighs charred at the edges and brushed with glaze until they shine. Serve with coconut rice and grilled pineapple rings.

Step by stepInstructions

  1. Simmer the pineapple juice, soy sauce, brown sugar, garlic, ginger and ketchup in a pot for 10-12 minutes, until slightly thickened.
  2. Reserve 1/2 cup of the glaze for finishing; pour the rest over the chicken in a bowl and marinate for 2 hours.
  3. Preheat a grill or grill pan to medium. Grill the chicken for 8-10 minutes per side, turning occasionally.
  4. Brush the chicken with the reserved glaze during the last 5 minutes of cooking, turning so it caramelises without burning.
  5. Rest for 5 minutes, garnish with green onions and serve with rice.

💡 Chef tips & storage

Brush the glaze on only at the end so the sugars don't burn black. For extra smoke flavour, add soaked wood chips to the coals.
