Naleśniki are Poland’s delicate, eggy crepes — whisper-thin pancakes that cook in seconds and fold around any filling you can dream up. Slightly thicker and more substantial than French crepes, they’re soft, tender, and endlessly versatile.

They come stuffed with sweet farmer cheese, jam, or apples and dusted with powdered sugar; or rolled around savory fillings like mushrooms and meat. Whether for breakfast, dessert, or a light supper, naleśniki are pure, gentle comfort.

Step by stepInstructions

  1. Whisk the flour, milk, eggs, melted butter, sugar, vanilla, and salt into a smooth, thin batter. Rest it for 30 minutes.
  2. Heat a small nonstick skillet or crepe pan over medium heat and brush with butter.
  3. Ladle in about 1/4 cup of batter, tilting the pan to coat the bottom thinly. Cook 1-2 minutes until set and lightly golden, then flip and cook 30 seconds more.
  4. Stack the finished crepes under a towel to keep warm.
  5. For sweet filling, blend the farmer cheese with a little sugar and vanilla, spread down the center of each crepe, and roll or fold.
  6. Serve warm, dusted with powdered sugar, with jam alongside if you like.

💡 Chef tips & storage

Resting the batter relaxes the gluten and makes the crepes more tender. The first crepe is always a test — don't judge the batch by it.
