Pan Con Tomate

Pan con tomate is Catalonia’s perfect simplicity: rustic bread toasted until crisp, rubbed with garlic and ripe tomato, then drizzled with olive oil and salt. The tomato melts into the warm bread, turning it juicy and fragrant.

It is the daily breakfast and the essential side for everything from ham to grilled squid. The secret is using the ripest tomatoes you can find and olive oil you would happily drink.

Step by stepInstructions

  1. Toast or grill the bread slices until deeply golden and crisp on both sides.
  2. Rub the cut side of a garlic clove over one side of each warm slice, just enough to perfume it.
  3. Rub the cut tomato halves over the same side, pressing gently so the flesh and juices soak into the bread.
  4. Drizzle each slice generously with olive oil — the bread should glisten.
  5. Finish with a pinch of flaky sea salt.
  6. Top with serrano ham if using, and serve immediately while the bread is still warm.

💡 Chef tips & storage

Rub the tomato with pressure so the pulp really melts into the crumb — a quick swipe gives a pale, flavorless result. Choose a fruity, peppery olive oil; it carries the whole dish.
