Papua New Guinea Chicken Muidu

Muidu is a hearty Highlands-style stew of chicken cooked gently in coconut milk with ginger, onion and leafy greens. It is the kind of dish that bubbles on the stove for hours in PNG kitchens, filling the house with coconut and ginger aromas.

The long simmer gives you spoon-tender chicken in a velvety, savoury-sweet sauce that begs for rice or boiled sweet potato. Comforting, warming and deeply satisfying.

Step by stepInstructions

  1. Heat the oil in a large pot and brown the chicken on both sides; remove and set aside.
  2. Cook the onion until soft, about 5 minutes. Add the ginger and garlic and cook 1 minute more.
  3. Return the chicken with the coconut milk, stock, salt and pepper. Bring to a simmer, cover and cook for 40 minutes.
  4. Add the greens and simmer uncovered for 10 minutes, until wilted and the sauce has thickened.
  5. Taste and adjust the seasoning. Serve hot over rice or with boiled sweet potato.

💡 Chef tips & storage

Use full-fat coconut milk for the creamiest sauce. If the sauce reduces too much, splash in a little water or stock to loosen it.
