Each slice reveals tidy layers of soft biscuit, sticky caramel, and cloud-light cream, all flecked with the brittle snap of peppermint crisp chocolate.   1. Whip the cream with the powdered sugar, vanilla, and peppermint extract until soft peaks form.
  2. Spread a thin layer of caramel in the bottom of a 9x9-inch dish.
  3. Dip each biscuit briefly in the milk and lay a single layer over the caramel, breaking biscuits to fit.
  4. Spread a third of the caramel over the biscuits, then a third of the whipped cream, and scatter with a third of the grated chocolate.
  5. Repeat the layers twice more, finishing with cream and a generous crown of grated peppermint crisp.
  6. Cover and refrigerate for at least 4 hours, until the biscuits soften.
  7. Slice and serve cold, topped with crushed peppermint candies if you like.
