Tostones Puertorriqueños - Portoricain recipe

A traditional Puerto Rican dish — Tostones are the crisp, twice-fried green plantain chips that appear at nearly every meal on the island. Sliced, fried, flattened and fried again, they turn shatteringly golden with a soft, starchy heart. Garlic-salted and dunked in mayo-ketchup, they are the snack that binds every gathering together.

Step by stepInstructions

  1. Peel the plantains and cut them crosswise into 1-inch (2.5 cm) thick rounds.
  2. Heat the oil to 350°F (175°C) and fry the rounds in batches until pale golden and just cooked through, about 4 minutes. Drain on paper towels.
  3. Flatten each round with a tostonera or the bottom of a heavy glass until about 1/4 inch (6 mm) thick.
  4. Return the flattened plantains to the oil and fry again until golden brown and crispy, 2 to 3 minutes per side. Drain, sprinkle generously with garlic salt, and serve hot.

💡 Chef tips & storage

Soaking the peeled plantains in salted water for 10 minutes before frying makes them extra crisp. For mayo-ketchup, combine two parts mayonnaise with one part ketchup and a squeeze of garlic.
