Placek is Poland’s homely, beloved yeast cake — a big, golden sheet of soft, airy dough baked with a buttery crumble on top and, often, a layer of fruit hiding underneath. It’s the cake grandmothers pull from the oven on Sunday afternoons.

Known as placek drożdżowy, it’s baked in a large pan and cut into generous squares, made for coffee, for visits, and for children’s after-school snacks. Plums, apples, or rhubarb tucked beneath the crumble make it something to remember.

Step by stepInstructions

  1. Dissolve the yeast in the warm milk with 1 tsp sugar and let it foam for 10 minutes.
  2. Mix the flour, remaining sugar, and salt. Add the yeast mixture, eggs, melted butter, and vanilla, and knead into a soft dough. Cover and let rise until doubled, about 1 hour.
  3. Spread the dough into a buttered 9 x 13-inch pan and press the fruit slices gently into the surface if using.
  4. Rub the crumble ingredients together until clumpy and scatter over the dough. Let rise 30 minutes.
  5. Bake at 350°F for 30-35 minutes until golden and springy. Cool in the pan before cutting into squares.
