Pot-au-Feu is France’s great boiled dinner: beef and marrow bones simmered for hours with carrots, leeks, turnips, and potatoes until the broth is clear and golden and the meat falls apart. It is the original one-pot comfort food.

Traditionally served as a sequence — the marrow on toast, then meat and vegetables with coarse salt, mustard, and cornichons, then the broth as a final course. It is humble, restorative cooking that fills the house with a wonderful aroma.

Step by stepInstructions

  1. Place the meats and marrow bones in a large pot, cover with cold water, and bring slowly to a boil, skimming off the foam.
  2. Add the clove-studded onion, bouquet garni, and peppercorns, and simmer gently for 2 hours.
  3. Add the carrots, leeks, and turnips and simmer 45 minutes more.
  4. Add the potatoes and simmer 30 minutes, until everything is tender.
  5. Slice the meat, arrange it with the vegetables, and serve with a ladle of broth, coarse salt, mustard, and cornichons.
