  1. Mix the flour and salt in a bowl, then stir in the egg, warm water, and oil to form a soft dough, and knead until smooth.
  2. Cover the dough and let it rest for 30 minutes while you prepare the filling.
  3. Boil the potatoes in salted water until tender, drain well, and mash until smooth.
  4. Melt the butter in a skillet over medium-low heat and cook the sliced onions slowly for 15 to 20 minutes, until deeply golden and caramelized.
  5. Fold the caramelized onions into the mashed potatoes and season with salt and pepper.
  6. Roll the dough thin, cut into 3-inch rounds, fill each with a spoonful of potato mixture, and pinch the edges to seal.
  7. Boil the perogies in salted water until they float, about 3 minutes, then fry them in butter until golden and crisp on both sides.
  8. Serve hot with sour cream and a sprinkle of fresh dill.
