Prickly pears taste like watermelon and bubblegum — blended, strained, and churned into the most striking pink sorbet.

  1. Peel the prickly pears by slicing off both ends, cutting through the skin, and pulling it away; dice the flesh, avoiding the seeds.
  2. Blend the flesh with the water until smooth, then strain through a fine sieve to remove seeds.
  3. Heat the sugar with 1/2 cup water until dissolved; cool.
  4. Stir the syrup, prickly pear juice, and lime juice together; chill thoroughly.
  5. Churn in an ice cream maker until thick, then freeze 2 hours before serving.
