Salt fish cakes are what happened when a thrifty outport cook looked at a piece of salt cod, a bowl of leftover potatoes and a crowd of hungry mouths. The fish was soaked and flaked, folded into the potatoes with a bit of onion, and fried in pork fat until the outsides turned golden and lacy. Every family had their own ratio of fish to potato — some liked it mostly fish, some mostly spud — and arguments about it are still settled at kitchen tables today.

What makes them great is that crispy, craggy crust giving way to a soft, savoury centre with little flakes of cod in every bite. They’re wonderful plain, but a drizzle of molasses is the traditional Newfoundland move, and a knob of butter melted on top never hurt anyone. Serve them for supper with baked beans, or for breakfast with fried eggs — they don’t care what time of day it is.

Step by stepInstructions

  1. Drain the soaked cod, place it in a pot of fresh water and simmer for 15 minutes until it flakes easily, then drain well.
  2. Pick through the cooked cod to remove any bones and flake it finely into a large bowl.
  3. Add the mashed potatoes, grated onion, beaten egg, melted butter and a generous grinding of pepper, and mix until well combined.
  4. Shape the mixture into patties about 3 inches across, dredging each one lightly in flour.
  5. Heat the pork fat in a heavy skillet over medium heat and fry the cakes for 4 to 5 minutes per side until deep golden and crisp.
  6. Drain on paper towels and serve hot, with molasses on the side if you like it the old way.

💡 Chef tips & storage

Chill the mixture for 30 minutes before shaping — it makes the patties much easier to handle. Taste before adding salt; the cod usually brings plenty of its own.
